Martha Stewart bisteeya takes 3 hours 30 minutes and spiced chicken, toasted almonds and eggs to make a flaky, golden phyllo pie dusted with cinnamon sugar. This show-stopping Moroccan chicken pie, an easy dessert-style showstopper in spirit, fits Sunday dinner, holiday gatherings and special dinner party nights.
Cook the egg mixture in the reduced stock until it turns thick and dry, because that is what keeps the layers firm. Leave it wet and the phyllo goes soggy before the pie ever reaches the oven.
Martha layers sweet cinnamon almonds with savory chicken, preserved lemons and herbed eggs, so every slice swings between sweet and salty. She also folds the phyllo over the filling and caps it with 6 to 8 more buttered sheets, which gives the crust its crackly look.

kcalCrisp, buttery phyllo shatters around layers of tender shredded chicken, soft herby eggs and crunchy cinnamon almonds. A dusting of confectioners' sugar and cinnamon finishes the sweet and savory pie.
Ingredients
3 1/2 pounds bone-in, skin-on chicken legs and thighs
4 cloves garlic, minced
1 teaspoon coarse salt
1/2 teaspoon freshly ground black pepper
3/4 teaspoon ground ginger
1/2 teaspoon saffron
1/4 teaspoon turmeric
4 cinnamon sticks
2 tablespoons unsalted butter
1 large onion, finely chopped
2 tablespoons olive oil
3/4 pound almonds, finely chopped
1/2 cup confectioners' sugar, plus more for dusting
1 1/2 teaspoons ground cinnamon, plus more for garnish
1/4 cup fresh lemon juice
8 large eggs
1 cup chopped fresh flat-leaf parsley leaves
1/2 cup chopped fresh cilantro
1/3 cup finely chopped preserved lemons
About 1 cup Clarified Butter
1 (12-ounce) package frozen phyllo, thawed in refrigerator
Directions
- Season the chicken: Place 3 1/2 pounds chicken legs and thighs in a large bowl with 4 minced garlic cloves and 4 cinnamon sticks. Add 1 teaspoon coarse salt, 1/2 teaspoon pepper, 3/4 teaspoon ground ginger, 1/2 teaspoon saffron and 1/4 teaspoon turmeric, then toss and set aside.
- Simmer the chicken: Heat a large Dutch oven over medium-high heat, melt 2 tablespoons butter and sauté 1 chopped onion. Add the chicken mixture with enough water to cover, bring it to a boil, then reduce the heat, cover and simmer for 1 1/4 hours.
- Toast the almonds: Heat 2 tablespoons olive oil in a heavy sauté pan, then cook 3/4 pound chopped almonds, stirring, until browned. Let them cool, then stir in 1/2 cup confectioners' sugar and 1 1/2 teaspoons ground cinnamon.
- Cook the egg mixture: Lift the chicken and all the bones out of the stock, then stir in 1/4 cup lemon juice. Whisk 8 beaten eggs into the stock and cook until thick and dry, then fold in 1 cup parsley and 1/2 cup cilantro.
- Shred the chicken: Discard the bones and skin, then shred the meat with your fingers into pieces no larger than 1 inch. Stir in 1/3 cup chopped preserved lemons and set the bowl aside.
- Prep the pan: Preheat the oven to 350°F. Brush a 10-by-2-inch round cake pan with clarified butter.
- Line with phyllo: Lay 1 sheet of phyllo in the pan at a time, letting the edges overhang. Brush each sheet with clarified butter before adding the next in an overlapping circle, using 6 to 8 sheets to cover the bottom.
- Layer the filling: Spread half the shredded chicken in the pan, then cover it with half the almond mixture and half the egg mixture. Repeat the layers with what is left, then fold the overhanging phyllo toward the center.
- Top and chill: Cover the pie with another 6 to 8 buttered phyllo sheets in the same overlapping circle, then trim a little excess with scissors. Tuck the overhanging edges under, brush the top with clarified butter and chill at least 30 minutes.
- Score and bake: Score the top in a diamond pattern with a sharp knife, then bake about 45 minutes until golden brown. If it is not golden yet, raise the oven to 375°F and bake 5 to 10 minutes more.
- Dust and serve: Take the pie out of the oven and dust it with confectioners' sugar. Sprinkle ground cinnamon over the top in a decorative pattern with your fingers, then slice and serve.

FAQs
Can I use ghee instead of clarified butter?
Yes, ghee works well for brushing the phyllo sheets and saves you the step of clarifying butter yourself. Melt it first so it brushes on smoothly, and the layers will still bake up light and crisp.
How do I keep the phyllo from drying out while I work?
Keep any sheets you are not using covered with plastic wrap or a damp kitchen towel. Phyllo dries and cracks quickly in open air, so pull out one sheet at a time as you layer.
Can I make bisteeya ahead of time?
You can cook and shred the chicken up to one day ahead, which cuts down the day-of work. Save the stock, because you need it for the egg mixture, and bring it back to a simmer before whisking in the eggs.
What should I serve with bisteeya?
Serve it as a first course before a couscous or tagine, or as the main course. A bright, crunchy salad like carrot with dates and sunflower seeds or shredded beet and carrot balances the rich, sweet pie.
What is the most common mistake with this pie?
Leaving the egg mixture too wet is the big one, since the extra moisture soaks into the phyllo. Cook the eggs in the stock until thick and dry, and skip brushing too little butter between sheets, which makes the crust less crisp.
