Martha Stewart brownie sundae ice cream cake turns fudgy cocoa brownie layers, peanut butter and two kinds of ice cream into a striped frozen dessert in 8 hours. It's an easy make-ahead ice cream cake for summer parties, birthdays or Fourth of July cookouts, and it's no-bake once the brownie cools.
Cut the brownie into three pieces that each fit the loaf pan a little wider than the last. That way the layers stack flush against the sides and slice into clean stripes.
Martha stacks the cake like an old-fashioned sundae, with crunchy peanut butter and crushed raspberries tucked between the vanilla and strawberry ice cream layers. The brownie is also baked only until it's set on top but still wobbly in the center, so it stays soft enough to slice straight from the freezer.

kcalFudgy brownie layers alternate with peanut butter, raspberries and two softened ice creams, then freeze solid in a loaf pan. Slices come out striped and creamy, finished with whipped cream, sugared peanuts and a cherry.
Ingredients
Vegetable-oil cooking spray
2/3 cup all-purpose flour
1/4 cup Dutch-process cocoa powder
3/4 teaspoon coarse salt
1/2 teaspoon baking powder
1 stick unsalted butter, room temperature
1 cup sugar
2 large eggs, room temperature
1 teaspoon pure vanilla extract
1/3 cup whole milk
4 ounces bittersweet chocolate, preferably 61% cacao, melted
1/2 cup crunchy peanut butter
1 1/4 cups vanilla ice cream, softened
1/3 cup crushed raspberries
1 1/2 cups strawberry ice cream, softened
Lightly sweetened whipped cream
Sugared Peanuts
Maraschino cherries, for serving
Directions
- Prep the pan: Preheat the oven to 375°F, then coat a 9-by-13-inch baking pan with cooking spray. Line it with parchment, leaving overhang on the long sides, and spray the parchment too.
- Mix the dry ingredients: Whisk 2/3 cup all-purpose flour, 1/4 cup Dutch-process cocoa powder, 3/4 teaspoon coarse salt and 1/2 teaspoon baking powder in a bowl. Set it aside while you make the batter.
- Cream the butter: Beat 1 stick room temperature butter with 1 cup sugar on medium speed until pale and fluffy, about 3 minutes. Then add 2 large eggs one at a time, beating until smooth, and beat in 1 teaspoon vanilla.
- Finish the batter: With the mixer on low, add the flour mixture in three batches, alternating with 1/3 cup whole milk in two additions. Beat in 4 ounces melted bittersweet chocolate once everything is combined.
- Bake the brownie: Spread the batter into the prepared pan with an offset spatula, then bake about 15 minutes. It's ready when the top is set but the center is still wobbly, so cool it completely in the pan on a wire rack.
- Cut the brownie: Line an 8 1/2-by-4 1/2-inch loaf pan with plastic wrap, then use the parchment to lift the brownie out. Cut it crosswise into 3 pieces: one that fits the bottom exactly, one slightly wider and one widest of all to match the pan as it widens.
- Layer the cake: Place the smallest brownie piece top-side up in the loaf pan, then spread on 1/2 cup crunchy peanut butter and 1 1/4 cups softened vanilla ice cream. Add the second piece top-side down, spread with 1/3 cup crushed raspberries and 1 1/2 cups softened strawberry ice cream, and top with the last piece top-side down.
- Freeze until firm: Cover the pan with plastic wrap and freeze at least 6 hours and up to 1 day. This gives the ice cream time to set so the stripes slice cleanly.
- Unmold and decorate: Run a butter knife around the edges, then lift the cake out by the plastic and set it on a platter. Top with lightly sweetened whipped cream and sugared peanuts.
- Slice and serve: Slice with a sharp knife, wiping the blade clean between each cut. Serve every slice with a few more sugared peanuts and a maraschino cherry.

FAQs
Can I make this ice cream cake ahead of time?
Yes, it actually has to be made ahead, since it needs at least 6 hours in the freezer. It keeps up to 1 day per the recipe, so plan to serve it the day after you assemble it.
Can I use different ice cream flavors?
Swap in chocolate, coffee or cherry ice cream if you like, as long as you soften it so it spreads evenly. Keep the amounts the same, about 1 1/4 to 1 1/2 cups per layer, so the stripes stay the same height.
Do I need a loaf pan exactly 8 1/2 by 4 1/2 inches?
That size is what the brownie pieces are cut to fit, so it works best. If your pan is a little different, cut the three brownie pieces to match its bottom, middle and top widths.
How do I get clean slices?
Use a sharp knife and wipe the blade clean between each cut. Letting the cake sit out for a minute or two before slicing also helps if it's rock hard.
What's the most common mistake with an ice cream cake like this?
Using ice cream that's too hard or too melted is the usual problem. Soften it just until spreadable, then get the cake back in the freezer fast, because soupy layers won't set into neat stripes.
